1) The woody heats up quicker than the normal wood fired ovens, infact you can start cooking some food in it after 15 mins.
2) When cooking pizzas it is best to allow the whole oven to heat up for at least 1.5 hours to gain the most heat, the oven needs to be around 400 degree's for pizza cooking.
3) When you light up the oven do not have the double deck rail installed. Put the rail in when the oven is around 200 degrees. This is optimum temp for cooking most foods.
4) Put silver foil covering over all foods at the start of cooking. This locks in all the flavours. Then remove the tin foil 15 minutes before the food is cooked.This will allow the food to go to a nice brown crispy colour.
5) You can add wine to your drip tray when you are using the rotisserie, this will help keep the moisture in the food and give it a nice flavour.
